Mexican-inspired Shepherd's Pie

I have been sadly neglecting this journal and I will cook things and even take pictures, intending to post them...but then forget.

So, today, my goal is to get at least one recipe up and hopefully get two more posted this week (in between working on taxes).

First on the menu is a Mexican-inspired Shepherd's Pie. This recipe arose from needing to find a use for the leftover tamale dough in my freezer.

2 cups Masa dough (prepare according to package instructions)
1 lb. Hamburger
1/2 Onion, diced
1 cup Tomato, chopped
1 cup Refried beans
1/4 cup Peppers, diced (whichever kind you prefer)
1/2 cup Cheese, grated (we like co-jack around here)
1 tbsp. fresh Cilantro, diced
1 tbsp. fresh Oregano, diced
1 tbsp. Paprika
2 tbsp. Cumin powder
Salt and Pepper

Pre-heat oven to 350F.
Saute the hamburger until brown, drain.
While cooking, prepare the masa dough according to package instructions.
When hamburger is cooked, add in onions and cook for five minutes.
Add in peppers, spices and seasonings, tossing until all is coated. Remove from heat.
Spread refried beans in the bottom of a 2 1/2 quart baking dish.
Spoon seasoned meat mixture on top of beans.
Sprinkle cheese over meat mixture.
Add tomatoes over top.
Spread masa dough over entire pan.
Cover dish with lid and place in preheated oven.
Bake for about 30 minutes, until dough is light and fluffy and mixture is bubbly.

Allow to cool slightly and serve with favorite hot sauce.
