We had a breakfast potluck at work at this morning and after seeing a few entries of "egg bake" and rolls/muffins/etc, I figured that I needed to come up with something a little more creative.Ingredients1 lb. Hamburger1/2 large Yellow Onion, diced1/2 Bell Pepper, diced1/4 c. Green chilies, diced1/2 c. Tomato, diced4 cloves Garlic, minced1 tbsp. Cumin powder1 tsp. Paprika2 tsp. dried Oregano2 tsp. dried Cilantro1 tsp. Ancho chili powderPepperSalt16 Eggs1/2 c. Milk24 small Tortillas2 c. Cheese, shredded (cheddar, co-jack, etc)DirectionsBrown and season hamburger. Drain grease.Stir in vegetables and saute until soft.While vegetables are cooking, crack eggs into bowl and whisk with milk.Add in seasonings. Adjust to taste.Pour in eggs and scramble until soft and fluffy.Lay out 4-5 tortillas and sprinkle cheese on each one.Place one spoonful of the egg mixture on each tortilla.Fold in the ends and wrap tortilla around mixture.Place in large baking dish, packing tightly.These can be layered with parchment paper in between. Also, they can be prepared ahead of time, covered with aluminum foil and chilled. Warm in 300F oven for 1 hour prior to serving.I got positive reviews at the brunch, though my kids were disappointed that I did not bring any home with me. I guess that I am going to have to make this one again.
